refreshing treat on a hot day. Why not whip up some popsicles to celebrate the lazy hazy days ahead? Here are four recipes to try. I know I promised two. What can I say... I went a little crazy with the schweetness. Before I go into specifics on the recipes, you may need to adjust the amount of simple syrup you use depending on the sweetness of the fruit. The stuff I used was pretty flavorful, especially the pineapple.
If what you get your hands on is a bit lackluster, or if you want your pops uber sweet, then toss in a bit more syrup. And speaking of that, to make your simple syrup, take a cup and a half of sugar mixed with a cup of water. Bring it to a boil, boiling it until the sugar dissolves, then let it cool. You are now ready to begin.
First: Raspberry Lemon Thyme
Get a small bunch of lemon thyme leaves, about 2 Tablespoons. If you don't have that, you can substitute a teaspoon of finely ground lime rind.
Take a half cup of water and muddle the leaves, or rind in that. Strain out the leaves or rind. Put a pint (1 and 1/2 cups) of raspberries in the blender with the water and 2 Tablespoons of smiple syrup. Puree.
Pour into Dixie cups or 6 ounce cups (3 or 4). Put cups into freezer. After a half hour, put sticks into the centers of the cups, keep in freezer till frozen. Enjoy.
Second: Honey Lemon Banana
Third: Strawberry Ginger Lime
Cut up one and 1/2 cups of strawberries. Put them into the blender with 1/2 cup water, two Tablespoons of simple syrup, one teaspoon of lime juice, and a dash of ground ginger (you can skip the ginger if you do not like it). Puree. Pour into Dixie cups or 6 ounce cups (3 or 4). Put cups into freezer. After a half hour, put sticks into the centers of the cups, keep in freezer till frozen. Enjoy.
Fourth: Pineapple Vanilla
Cut up 1 and 2/3 cups of fresh pineapple. Put it into blender with 1/2 cup water, one and 1/2 Tablespoons of simple syrup and 1/2 teaspoon of pure vanilla. Puree. Pour into Dixie cups or 6 ounce cups (3 or 4). Put cups into freezer. After a half hour, put sticks into the centers of the cups, keep in freezer till frozen. Enjoy.
